 "Washoku" is the traditional Japanese cuisine known for its emphasis on fresh, seasonal ingredients and the artful presentation of food. Therefore, the recipe changes every season in this class.
We will show you just how simple it can be to integrate traditional Japanese cooking techniques and flavors, along with their culinary basis (such as umami and basic seasoning), into your repertoire for the season.
You’ll make an Ichiju Sansai meal (soup, rice, one main, two side dishes), learn about Japanese culture, culinary customs, ingredients, etiquette, and hospitality from a bilingual professional instructor who will kindly teach you.

*Yoyogi-Uehara is about 5 minutes from Shinjuku Station by train, or about 10-15 minutes from Shibuya Station by bus.

Grilled Spanish mackerel in Saikyo style(marinated with miso), steamed rice with bamboo shoots, and seasonal ingredients as two side dishes

Goya Chanpuru (Bitter melon stir-fried with tofu and pork),  and seasonal ingredients as two side dishes
Autumn
Autumn salmon with mushroom sauce and seasonal ingredients as two side dishes
Winter
Yellowtail teriyaki and seasonal ingredients as two side dishes
